Retirement and Blogging

I have been retired for a while, yet I still have a hard time finding the time to blog.  I am going to try to do better.  My granddaughter who will turn 16 in January ask for a cookbook of all my recipes for Christmas. So it looks like I have a project to work on.  I think it would be neat to give all my granddaughters a cookbook for Christmas.  I am going to try and post my progress on the project here as well as making the time to add new recipes to this blog.  Wish me luck and I look forward to getting back involved with my blogs.

Crock Pot Meatloaf ..

Try it once, and you'll never go back to your old way of cooking it! So Moist .. My family begs for it ~ Debbie Ingredients: 2 lbs ground beef 2 eggs, beaten 3/4 C milk 1 tsp salt 1/2 tsp pepper 3 slices bread, crumbled or torn into small pieces 1/2 C diced onion 1 envelope dry Ranch Dressing mix 1/2 C ketchup Directions: Mix eggs, milk, salt, pepper, and bread crumbs. Allow to soften (about 20 minutes). Combine this mixture with ground beef, onion, ranch pack, and ketchup. Mound in a greased crockpot. Cover the top of the mixture with additional ketchup. Chocolate Gravy

Chocolate gravy was one of the things that my Mom was most popular for making.  It was the greatest sweet treat that a kid could have.  If you've never had it you don't know what you've missed!  It's thick and when it's hot and you put it over butter biscuits, OH MY!!!!

Oven Fried Veggies

This recipe works with green tomatoes, zucchini, pattypan and yellow squash. 2 lbs. green tomatoes or any type squash, sliced 1 c. seasoned bread crumbs 1 c. milk/you can add an egg to help the bread crumbs stick better Preheat oven to 425 degrees. Dip squash in milk and drop in baggy with bread crumbs. Shake to coat. Spread in single layer on cookie sheet that has been sprayed with your favorite cooking spray. Bake in oven 8-12 minutes, turning once.   I sometimes slice my squash the length of the veggie.
