Apple Pie Egg Rolls

Photo provided by Nancy Cloutier  Ingredients Filling: 3 cups apples, peeles and diced (apporx. 3 apples) 4 Tbps sugar   4Tbsp flour                 3/4 Tsp Cinnamon  1 Tsp Lemo n juice  12 Egg Roll Wrappers Oil for frying Instructions 1. Combine all filling ingredients and mix well 2. Place 2 hearing tablespoon of filling in the center of each wrapper. Fold in the sides and roll the wrapper tightly. Use a dab of water to secure the tip of the wrapper. 3. Preheat oil to 350 degrees. Fry each egg roll for about 4-5 minutes or until brown and crispy. 4. Sprinkle with powdered sugar and serve warm.

Roasted Sweet Potatoes

 Photo and Recipe by Stacey Pollock Folds  Ingr edients: 3 Sweet potatoes, peeled and cut into bite size cubes 2 tsp olive oil 1 tbsp butter 1 tbsp of brown sugar (organic) 1 tsp of ground cinnamon 1/ 4 tsp of ground nutmeg Pinch of ground ginger Sea salt, to taste Directions: Preheat the oven to 350 degrees. Coat a small baking dish with cooking spray. Peel and dice the sweet potatoes into bite size cubes and place in the baking dish. Melt butter in the microwave and pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt. Add more sugar or cinnamon if desired. Toss to coat evenly. Bake in the oven for 60 minutes. Stir the sweet potatoes once or twice during roasting.  This was another great find by my friend/sister Faye.  Thanks for sharing sis!!

Venison Sausage Scramble

1 lb of sausage(I use venison but you can use pork) 3 potatoes peeled and diced 4 eggs Scramble fry the sausage in a large skillet. Drain off excess fat to use to fry the potatoes.  Fry potatoes then add the sausage back in and break the eggs over the mixture.  Stir until the eggs coat the mixture and are done.  You can spice things up by adding salsa to the mix.  Can be served in soft taco shells or with biscuits.
